You Won't Know it's Vegan Chili

Eat like a Vegan - Tastes like a Carnivore

I don't consider myself a vegan. I did however get inspired by some leaders on my Arbonne team

(who are vegan) after rooming with them for 4 nights in Las Vegas during our conference.

That inspiration led to crockpot PROTEIN CHILI

Here is what you will need:
1 medium yellow or white onion diced
1 bell pepper diced
3-5 cloves of garlic mashed into worms thru one of those Pampered Chef tools.
Water or vegetable broth for sauteing
4 scoops Arbonne Protein Boost (10 grams of protein per scoop, you can add more)
1 Can diced or crushed tomatoes (Organic)
1 Can drained and rinsed red kidney beans
2 C Lentils. I used the sprouted lentil trio from Costco.
4 Cups Water
Daiya Cheese Shreds optional

Chili Seasoning: You can buy a gluten free version at the store, or mix this together.

  • 2 Tbsp chili powder
  • 1 tsp ground cumin
  • ¼ tsp cayenne pepper
  • ¼ tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp salt
  • ¼ tsp (approximately) freshly ground pepper
  • *Adapted from www.budgetbytes.com
Before the protein boost is added
My Costco find

 1. Saute the onion, pepper and garlic until soft.  Don't over do it as they will cook more in the crock pot.

2. Load crockpot with Lentils, water, spices, tomatoes and beans

3. Add 4+ scoops of the protein boost powder. Don't worry, you can't taste it.

Four scoops = 40 grams of vegan protein

I was worried it was going to be milky and weird.

Look how amazing this turned out.  It's on repeat in the Hallberg home.
I topped with Daiya cheese shreds

Arbonne Vegan Protein Bars

This is the basic recipe.
You can modify and add to it, kinda like a meatloaf. Whatever is around, put it in there.

3-4 Cups Gluten Free Oatmeal or Rice Krispies

In separate bowl combine:
2 C Almond Butter
1.5 C Agave or Brown Rice Syrup
Microwave for 90 seconds and stir.

Pour warm ingredients over dry and mix.  Then roll into balls or spread out between parchment paper and cut into squares with pizza cutter. Put in fridge to firm up.

Some ideas to add in are pumpkin or sunflower seeds. A little course salt. Coconut flakes, coconut oil. so many ideas.

Flap Jack Friday

Like magic

I just turned my protein shake in to pancakes.

Ingredients:
2 scoops (1 serving) Arbonne Essentials Vanilla Protein Powder
1 scoop Arbonne Daily Fiber Boost
1 Egg
1/8 ts of baking powder
Almond Milk - I didn't measure this but slowly added (as I stirred this all together) until I got the consistency of pancake batter. Probably 1/4 C ish.

Put it all in a small bowl. I used my 1C glass Pyrex measuring cup.
Blend with fork.

Heat skillet and pour out like a pancake.

It won't bubble up like other pancakes, so just watch them and flip them when ready.

It's fall...break out the pumpkin bites!

Pumpkin Bites (AMAZINGLY GOOD)

Makes 4 -6

-4 T of dry ingredients (with Arbonne protein powder, oats, coconut, almond meal or any combo of those.)
-2 T nut butter
-2 T pumpkin puree (store-bought or homemade)
-1/4 t cinnamon
-1/8 t nutmeg
-1/8 t cloves
-pinch of dried ginger
-pinch of sea salt
-splash of vanilla extract

-Sweetener of choice (I rolled with Stevia, but if you like to use liquid sweetener, you may have to add to the dry ingredients).

1. Pulse the dry ingredients in the food processor until you have a powder.

2. Add in the remaining ingredients and pulse to combine.

3. Taste a little bit for spice and sweetness- adjust as needed. (If you use honey as your sweetener, you may have to add more dry ingredients)

4. The mixture will be very wet. Do not be afraid- just roll into balls using your hands or melon scooper and store in the fridge to harden slightly. In the fridge overnight allows the flavors to mingle and they taste even better.
