Don't Sweat Wellness in the Workplace

Healthy changes are hard to keep in the workplace. The breakroom tends to be center stage for Girl Scout cookies sales and your co-workers kids leftover birthday cake.  The culture keeps feeding you afterwork with happy hours and appetizers.

Clean Eating Katie is here to the rescue.  I am looking to bless your workplace with some fun wellness education. We can play quarters if you want with shots of protein shakes and fizz energy drinks.  Openings available weekdays 9am - 2pm. Email me to see if we are a fit for each other. Survey the Damage

This first Monday morning of the new year I had to survey the damage. Scale and measuring tape tools ready to go.  WAIT - I should go to the bathroom first. That's better.  Here we goooooooo


It wasn't as bad as my mind had allowed me to think.  Only a few pounds more than the last time I looked. One inch here and a half inch there.  

The past few days I have been meditating on health, changes, vision, future. I realized that it is the mental damage that needed the survey and needs the recovery. You see, I have allowed myself to slip back into old habits. "It's okay to have a glass of wine".  Slowly they creep in. "It's the holidays, celebrate".  "wow I drank the whole bottle". GUILT. SHAME. GRIP. CRAVE. ESCAPE. NUMB. 

For some it's sugar. Over exercising. Carbs. Alcohol. Porn. Drugs. They are all the same. They ALL fulfill desires of the flesh and push out the greatness of the creator. We turn left and we should turn right. Run away and hide when we should kneel down and pray. Fill the void with things of this world, not with Him.  

Today my fast has begun. I don't want to crave anything more than I crave His light and glory. So I surrender what I want now for what I want most. 

Don't worry, I'am keeping an eye on the landscape of my flesh too. Hey, I am human.

Organic Zucchini Salad

I find myself CRAVING this dish. Like I make it and mow down the entire bowl.  You can mix it up to suit your taste buds. It's just awesome.


Ingredients:
Use ORGANIC - If you don't know why, look at this
In a bowl, mix the following
1 raw Zucchini spiralized with a Veggeti 
10 +/- Cherry Tomatoes quartered
1/4 C chopped red onion
1 Can Chick Peas/Garbanzo Beans

Dress and Mix with:
1ts Extra Virgin Olive Oil (I get organic from Costco)
Lemon juice from about 1/2-1 lemon
salt and pepper to taste

You can add so much to this:
Cilantro and Chili powder
Cucumbers
*You could saute this puppy with some garlic and eat it hot.

Not Your Everyday Lemonade Stand


Summertime in my family means lots of lemonade. Anything easy to hydrate the kids that's not soda and full of sugar is OKAY with me.

Our FAVORITE drink WAS Crystal Light Lemonade and the delish Chick-fil-A Lemonade with Splenda.  Oh how I thought I found the perfect drink. Until.....(que sound effects.....dun, dun, dun) 
I schooled myself on artificial sweeteners.  



Don't despair, we have brought back lemonade and I am here to share it with you. You will need lemon juice. I purchase organic lemon juice from Costco. Water. I use the wonderful reverse osmosis water from my well. Sweetener.  Your choices are stevia, xylitol, maple syrup, honey.  



My typical mix is 1 Cup Lemon Juice to 6 Cups Water
Sweeten to taste.

FIVE SUPER AWESOME REASONS TO DETOX (GENTLY)


When people hear the word “DETOX”  they usually think drinking only only lemon juice and cayenne or picking up a pack of juice from a local store and gulping down some green stuff. 
I wanna be clear that that’s NOT what I’m talking about. I’m talking about GENTLY INTENTIONALLY detoxing. 
I wanted to talk about the BENEFITS that a detox does for the health of your body, mind and emotions.

#1. alkaline vs acidic

There are different pH’s around the body. The skin is at a certain pH, the stomach is at a certain pH, the vagina is at a certain pH, and they all vary depending on the job of that organ.
The stomach should be more acidic to break down proteins where as the blood is more alkaline to support health and balance.
So what’s the issue? 
With what we are DOING, EATING, and THINKING we can either send our body to a more ALKALINE state (where it wants to be) or to a more ACIDIC state where then chronic disease can prevail.
All chronic disease is a result of chronic inflammation and the body being too acidic.
What to do?
The number one way to alkalinize the body is to add minerals like magnesium and antioxidants like vitamin E.
Aka.
Eat whole foods. Avoid foods that are devoid in these nutrients like processed foods, foods high in sugar, foods coming from a box or through a window of your car.

#2. what about fasting?

This might be one of the most wildly misunderstood and misused words in the health world. Fasting means not eating for more than eighteen hours.
It gives the gut a break from foods, can be super beneficial and a way to add health to your body and life.
In the Christian culture, fasting is a prayer accelerant!  Abstain from food for spiritual reasons. Daniel 6:3 (KJV) And I set my face unto the Lord God, to seek by prayer and supplications, with fasting, and sackcloth, and ashes
The thing that people forget is that fasting ALSO means: 
Not answering the door
Not going to your stressful job
Not answering your phone
Drinking lots of water
Sleeping a lot
Taking a break from life
Giving the body and spirt an opportunity to fully rest, heal and rebuild
Please realize that when you’re JUST fasting from food it takes a toll on your adrenal glands, so when you’re still running around like a crazy person and not eating it creates a massive stress.
So please, if you are going to take a day and fast…do just that, take the DAY.
You’ll feel like a million bucks on the other end.

#3. it creates lifestyle shifts

A gentle 30-90 day detox from processed foods and processed life is such an incredible way to create a lifestyle transformation. When you choose to avoid foods that trigger inflammation like gluten, dairy, soy, sugar, alcohol and caffeine, it allows the body to press pause on the stress that those foods were creating in the body.
It also allows you to then pay attention to how AMAZING you feel when you’re not eating them.
It also allows you to then have CHOICE around what foods you then choose to reintroduce as part of your daily intake.
Most people who do a 30-90 detox feel so amazing that they then only OCCASIONALLY eat breads, pastas, pizza, cookies, crackers, cereal, cakes etc and they are no longer a staple in the pantry…they are an occasion.
And its only because your body told ya so. 

#4. you get to rewrite your cells

Cellular turnover varies for each organ. One of the coolest things about doing a gentle detox, like Arbonne’s 28 Day Clean Eating Challenge /30 Days To Fit (see here), it allows your body’s cellular turnover to happen WITHOUT a whole bunch of junk floating around and under chronic inflammation and old patterning.
Example?
Your taste buds for one.
Your taste buds turn over about every 10 days to 2 weeks. Foods that you might have disliked before will have an opportunity to show up a bit differently. You may find you become more sensitive to sugars or salt. You may find that the donut no longer even looks good (yes, its possible).
Your GI track turns over about every 3-5 days. You can rewrite the health of your GUT, and as many of you know 80% of our immune system sits in our gastrointestinal track.
Your immune cells live for around 90-120 days. With a detox program that you do over a 3-4 month time you can start to recreate your immune system.

#5. the importance of sleep

Again, many people who dive into a detox program will notice the first few days as not feeling awesome. That’s usually reflective of toxins being released from organs and affecting sleep, energy, or your mood.
Often people are addicted to sugar or caffeine and didn’t realize it so there may be a period of withdraw.
Pushing through the first few days will be the best thing you could do for yourself. Because when the body isn’t preoccupied with addictions and sugar cravings, and inflammation, it can focus on HEALING and REPAIRING.
When does this happen you ask?
When you sleep.
So avoiding all the foods that are triggering inflammation and addiction is JUST as important as giving your body the time to sleep.
The only thing that sleeps at night is your brain. Everything else is healing, repairing, and regenerating like mad (hence #4 above).
Ideally?
7-9 hours a night in TOTAL darkness.
Please.

Catch of the Day

Cioppino is a fish stew typically made from the catch of the day.

This recipe came from a cook book my mother-in-law gave me from her trip to Alaska.  I'll post the ISBN number at the end so you can order it if you want.

I love this dish. It is so simple and easy. I usually make it around special days....like Christmas. 

The leftovers in my fridge are going to be amazing for lunch.



1 - 1/2 lbs halibut (I used a cheaper cod), but into large bite size pieces
20 shrimp, peeled and deveined
2 Dungeness Crab, Disjointed. (I just got 2 crab leg clusters)
10 clams or mussels in shells
3 bay bay leaves
1/4 cup olive oil
1 onion, diced
2 bunches green onions, diced
1 green pepper, diced
5 cloves garlic, minced
2 cans stewed tomatoes
2 cans Mexican style tomatoes
1 can tomato, puree (I used sauce)
1 cup dry white wine or chicken stock to make it cleaner.
3 Tbsp. fresh basil, chopped
salt and pepper to taste.

Look for Wild Caught fish. Organic canned tomatoes (tomatoes are on the dirty list). Organic Pepper.

Heat oil in a large soup or stock pot. Add onions, green onions, peppers and bay leaves. Saute until onions are transparent. Add garlic and saute for 2 or 3 minutes more. Add tomatoes, tomato puree and white wine/chicken stock. Cover and simmer for 45 minutes. Add a little water if necessary. Add salt and pepper. Remove bay leaves. Add clams or mussels and crab. Cover and simmer for about 10 minutes. Add shrimp and fish and simmer until fish is just cooked through. Stir in chopped basil. Serve immediately. Yield 6 servings.

I added some quinoa on the side.

Clean Eating on a Stick

I think some people think I drink shakes

all day and don't eat real food.  

Beware of any quick fix weight loss/health scheme.  

Just eat REAL food.
I love food.

I love meat.
I love meat free of hormones and that was not fed GMO grains and corn.

Here is an EASY healthy dinner.


1 pound of grass fed beef sirloin
1-2 Organic Bell Peppers*
1-2 Zucchini* or Yellow Squash*
1 - Medium Onion
1 package whole mushrooms
1T Extra Virgin Olive Oil
1T Lemon Juice
Salt and Pepper
Mix and let it be all happy together in the bowl for 1-2 hours.
*These need to be organic because they are on the Dirty Dozen list 

 Kids like it because it is on a stick. 


Grill it and serve it up with some Lundberg non GMO Short Grain Brown Rice

It's not a FAD, It's a MOVEMENT!

I was introduced in clean eating in May of 2013. At that time, I knew a few people who read labels and others that veered away from gluten.  That May I was asked to do the Arbonne 28 Day Clean Eating Challenge and my world has never been the same. It not only revolutionized my kitchen.....It created an income stream by serving others up the same nutritious education.

This Clean Eating thing, is not a FAD.  Parachute Pants, that was a fad.  Humans caring to know what is in the food they are eating is a MOVEMENT.  Last March, my local grocery store chain (HEB) came out with an entire line of organic foods.  It is a global movement according to Robyn O'Brien's recent article.


Along with the changes at the store, more and more people are joining my Arbonne team to share and educate and learn about wellness.  I met with three people this week who are interested in joining this business because they believe in wellness and wealth!

What we put IN our bodies and ON our bodies really do matter.

Arbonne has been around for 35 years and has ALWAYS been mindful of their ingredients. The Clean Eating Challenge's I lead teaches people how to eat REAL food and most importantly, WHY.

There is not one drink or pill that will restore your health.  It starts with FOOD.

Cajun Shrimp and Quinoa Casserole

Some Like It Hot


Clean Eating is easier than ever. It just takes reprograming of what is "normal".  One tip to make your busy life easier.  When cooking quinoa and brown rice, make more than you need.  Make enough that you can eat off of it for a week.  You can always freeze it as well.

If you like shrimp and spicy, you will love this easy dish.  Now I have 3 daughters who do NOT like it hot.  So I simply skipped the jalapenos and cut down on the cajun seasoning.

Ingredients:
¾ lb large wild caught shrimp, peeled and deveined
4 medium organic tomatoes, cut into chunks
1 organic jalapeno, seeded and chopped
½ C chopped sweet onion
2 cloves of garlic, minced
1 tbsp tomato paste
3 tbsp olive oil
2½ tsp cajun seasoning
Salt and pepper to taste
2½ C cooked quinoa
Fresh cilantro for garnish

Directions:
- Toss the shrimp and 1 tsp Cajun seasoning together, set aside.
- Toss the tomatoes with 1 tbsp olive oil and 1 tsp Cajun seasoning, set aside.
- Heat 1 tbsp olive oil over medium heat in a cast iron skillet.
- Cook the shrimp until opaque, about 2-3 minutes per side. Remove from the pan and set aside.
- Add the remaining 1 tbsp of olive oil to the pan along with the onion, jalapeno and garlic.
- Cook until the onion and jalapeno are tender, stirring often.
- Mix in the quinoa, tomato paste, ½ tsp Cajun seasoning and tomato chunks.
- * If eating dairy - Top with the shrimp and then sprinkle with the fontina cheese.
- Place in the oven and bake at 350 for 15 minutes.
-- Garnish with fresh cilantro.

Vanilla Mint Arbonne Protein Shake

I wanted to try something different light and refreshing.


8-10 ounces of Original unsweetened Almond Milk
2 Scoops Vanilla Arbonne Protein Powder
1 handful of spinach leaves
10 mint leaves (could use more)
1/2-1C chopped ice
1 Scoop Arbonne Fiber Powder
1 Packet of Arbonne Digestion Plus

Mix in a good blender.

I ended up adding 1/2 of a peeled lime and reblending. So glad I did.

Quinoa "May Save Your Life" Salad


Try this delish quinoa dish at your next potluck, or just make a big batch of it to munch on during the week. I first had this at a friends house who was having a birthday tea party.  It was so yummy, I have been eating it ever since.

Quinoa, pronounced (Keen Wah), is a seed from a grain with many nutritional benefits.

Researchers have looked at certain antioxidant phytonutrients in quinoa, and two flavonoid - quercetin and kaempferol - are now know to be provided by quinoa in concentrated amounts. Some find their concentration can be greater than in other superfoods like berries.

I have been looking into what quercetin is since it is an ingredient in a new product, Thermobooster, I started taking. According to WebMD, Quercetin is used for treating conditions of the heart and blood vessels including, "hardening of the arteries", high cholesterol, heart disease and circulation problems.  It is also used for diabetes, cataracts, hay fever, peptic ulcer, schizophreina, inflammation, asthma, gout, viral infections, chronic fatigue syndrome, preventing CANCER, and for treating chronic infections of the prostate.  Quercetin is also used to increase endurance and improve athletic performance.

Who knew a simple salad could save your life.

Ingredients:2 Cups of Cooked Quinoa, cooled 2 Cups Raw Kale chopped1T oil (coconut, olive, avocado, etc)1 C Grape Tomatoes cut in half1 Avocado diced1/4 C Sliced Red Onion1 LemonSalt and PepperSaute kale in oilToss kale with quinoa, tomatoes, avocado, red onion. Squeeze lemon juice on topSalt and Pepper to tasteMix - eat.
